Einkorn Koikuchi is a sauce modeled on Japanese soy sauces made in Germany from einkorn and soybeans. It has matured longer and is therefore stronger than the Einkorn Usukuchi.

Ingredients: spring water (Brandenburg), SOY beans (Upper Bavaria), einkorn (Middle Franconia), sea salt (Portugal)
Maturation: Fermented in barrique oak barrels, pre-allocation of red wine
Fermentation time: over 18 months
Description: A bit darker in color and also stronger in taste than that shorter matured Einkorn Usukuchi Shoyu
Properties: Strong, hearty, straightforward, dark brown in color, gluten-free, vegan, unfiltered, unpasteurized
Use: For seasoning hearty dishes, red meat, game or in salad dressings
Shelf life: stored refrigerated for 6 months
