This soy sauce is a rarity! It was made purely from the classic ingredients soybeans, wheat, and salt - without any additives. It is also unpasteurized and therefore still contains all enzymes.
It has a very complex flavor, which on the one hand results from the use of wooden barrels for aging the soy sauce, and on the other hand because all the aromas are preserved since it was not pasteurized. The taste is full of umami, very rounded and long-lasting.
