Dashi Similar to our French bouillon, it is a base for a variety of soups, sauces and dishes. The basic dashi essentially consists of only 3 components: water, combi algae, bonito flakes (smoked, dried and then planed bonito fish).
Use:
- For original Japanese dashi
- For Kombu-Jime: a kind of pickling / marinating of fish
- Chopped up and cooked in soy sauce and mirin as an ingredient of typically Japanese Tsukudani
- For Kombu Maki
