Description Miso with fermented vegetables (Kinzanji Miso)
It is said that Miso Kinzanji is a very original miso. In the very beginning, it was the case that soybeans were fermented together with vegetables. About 770 years ago, a monk is said to have brought the recipe from China, specifically from the Kinzanji Temple, hence the name of this miso. In the Japanese region of Yuasa, the method has been preserved to this day.
Under the name Kinzanji Miso, grains, soybeans, and various vegetables have been and are fermented together. The vegetables fermented with it include, for example, cucumbers, eggplants, daikon radish, pumpkin, olives. Additional ingredients such as ginger, yuzu juice, shiso, etc. are also added.
The fermentation is carried out by the added koji. Koji refers to grain inoculated with the fungus Aspergillus oryzae. It breaks down starch and transforms proteins. This creates sweetness and umami.
This miso contains fermented cucumber and ginger, along with fermented wheat and soybeans. Its texture is chunky.
