Gochujang is a traditional Korean spicy seasoning made from fermented rice and fermented soybean paste mixed with chilies and syrup.
This handcrafted Gochujang paste, made in Germany, uses Miso with Amazake and Doburoku. Amazake is a traditional Japanese drink made from fermented rice and has a sweet taste and a smooth, porridge-like consistency. Doburoku is an unfiltered sake that still contains small rice particles. The chili peppers used come from a nursery in Mecklenburg-Vorpommern.
The taste of this Gochujang is savory, spicy, and sweet at the same time. Compared to the original Korean Gochujang, this one is somewhat fruitier in flavor. Its consistency is thick and pasty with small pieces of rice from the Doburoku.
